CHRISTMAS CHOCOLATE FUDGE COOKIES

Ingredients                                Quantity
Unsalted butter                         360gm
Brown sugar                               620gm
Chocolate melted                      400gm
Chocolate chopped/ chips     1300gm
Eggs                                               6nos
Flour                                             450gm
Cocoa powder                            100gm
Baking powder                           5gm

Method
Sift flour, baking powder and cocoa powder
Whisk eggs and sugar until pale yellow and ribbon consistency is achieved
Melt butter and chocolate in a bowl and set aside
Mix egg mixture into melted chocolate into even consistency
Fold in the sieved flour and chopped chocolate or chocolate chips, refrigerate for 20 mins.
Preheat oven to 350 degree C. Line the baking trays with parchment paper
Drop the batter into prepared cooking trays with moist fingers press the batter to an even shape
Bake for 12-15 min or until the tops of the cookies become cracked
Remove from oven and allow to cool on cooling rack

 

MINCED PIE

Ingredients                                                      Quantity
Sweet pastry base (you can either make the base or get it from the shop, totally your choice)
Refined Flour                                                   300 gm
Butter                                                                 200 gm
Eggs whole                                                       1 no
Sugar                                                                   100 gm

Minced filling
Ingredients                                                     Quantity
Shocked dried fruits in rum                             50gm
Egg                                                                           01 no
Breakfast sugar                                                    10gm

Method
Pie base
Sift the flour.
Mix cream, butter and sugar together
Add eggs gradually and mix at low speed in a mixer.
Now fold in refined flour and. Add zest of lemon
Spoon the mixture into shape mould and bake in the oven for 25- 30 minutes at 180*c. Check until a skewer comes out clean.

Filling
Mix breakfast sugar, dry nuts with rum, and sponge crumb egg.

 

TURKEY WALDROFF ROLL

Ingredients                                                    Quantity
Smoked turkey slice                                    4 no
Red Washington (apple)                            1no
Granny smith                                                 1 no
Celery (Stalk+ leaf)                                      25gm
Black walnuts                                                50 gm
Mayonnaise                                                    75 gm
Cream                                                              15 ml
Salt                                                                    3 gm
Black pepper crushed                                 2 gm

Method
Wash and clean apples
Get rid of middle part using apple corer
Dice (small) apples and finely chop celery stalk
Mix together apples, celery, walnuts and mayonnaise
Add seasoning and cream to adjust consistency
Lay turkey slice flat
Spoon walnut apple mix and roll lightly
Arrange on a platter garnished with celery leaves
Serve cold.

 

CHRISTMAS RUM TRUFFLE CAKE

Ingredients                Quantity
Chocolate sponge
Flour                            175 gm
Coco powder               25 gm
Eggs                             10 no
Sugar                           200 gm
Rum                            30 ml
Baking powder             ¼ tsp

Chocolate filling
Chocolate, melted         500 gm
Cream, whipped           1 lt
Egg white, beaten         5 eggs
Sugar                           100 gm
Rum                             30 ml

Method
Separate egg yolks and whites
Whisk sugar and egg yolks together and add vanilla essence
Whisk egg whites to stiff consistency
Sift flour and baking powder
Mix the egg whites and egg yolk mixture
Fold in the flour and coco powder into the eggs using cut and fold method
Line the greasing tray with butter paper and pour the mixture
Bake in preheated oven at 200degrees Celsius for 25 min.

Chocolate Filling
Melt the chocolate and keep aside.
Whip the cream and add vanilla essence.
Combine egg white and sugar on double boiler till stiff consistency.
Add cream to the above mixture.
Remove from double boiler add rum and melted chocolate.
Layer cake with thin chocolate sponge and pour thin layer of chocolate mixture on it and repeat the same.
Refrigerate for 1 hour and serve chilled piped with chocolate cream
